Natural gas powers the Blodgett ZEPH-100-G-ES SGL Zephaire convection oven’s direct-fired gas system, generating heat from 200 to 500 degrees Fahrenheit to bake, roast, or rethermalize product. Operators can adjust the removable inshot burners’ temperatures using the solid-state infinite thermostat, and a 60-minute timer counts down elapsed time to reduce the risk of foods undercooking or burning. A two-speed fan motor and a 3⁄4-horsepower blower motor circulate heat evenly throughout the cabinet, eliminating cold spots and reducing bake times. To preserve temperatures in cool ambient environments or while pans are removed or loaded, a 1-inch solid block and 1-inch mineral fiber insulation is built into the interior.
This single-deck Blodgett ZEPH-100-G-ES SGL gas convection oven is ideal for low-volume applications as its five chrome-plate racks can support five 18-inch by 26-inch baking pans in left-to-right positions. The racks can be adjusted in 11 positions with a minimum of 1.63-inch spacing. Its two dependent doors open at the same time so users can open or close them with one hand, which can streamline operation when inserting or removing pans. Dual-pane thermal glass windows provide a clear view into the lighted porcelainized baking compartment, and the stainless steel door frames withstand repeated opening and closing. For stable support on irregular surfaces, this 38.25-inch-wide by 36.88-inch-deep by 59.06-inch-high unit is furnished with adjustable, 25-inch stainless steel legs. This rust-, corrosion-, and wear-resistant stainless steel unit is simple to wipe clean, and it features a full angle-iron frame for rigidity throughout heavy use.
