The Alto-Shaam 1200-UP mobile heated cabinet holds as many as 16 standard full-size food pans, keeping food warm and at safe temperatures until it is ready to serve. Using Halo Heat®, the cabinet gently surrounds food with uniform heat to provide an extended holding life. Vents on both of the unit’s doors promote airflow and keep crispy foods from absorbing moisture.

The Alto-Shaam 1200-UP holding cabinet can also be used as a dough proofer. Its digital control system monitors drops in the unit’s internal temperature and quickly compensates for lost heat. Made of stainless steel, the insulated cabinet withstands heavy use in commercial applications.
